Zhang Baochun,general manager of keya brandy in Changyu Pioneer Wine Co,Ltd said," An excellent winemaker is like an conductor,he needs to balance all the factors to make perfect wine with good quality."
She said her career was chosen by her mother.She had no choice because her mother didn't allow her to study in other cities.So she chose to stay in Yantai and studied oenology in Yantai University.
After graduation in 1987,she was assigned to work in Changyu company in charge of wine and brandy research and production until now.
She has been working there for 28 years.Brandy has become a part of her life.Brandy was known as "the soul of wine".Zhang Baochun said,"There is no wine more complex than brandy,which requires more details and winemaker's skills.Winemaker should take control of its whole process."
She first put forward the idea to classify brandy by its making type.It was adopted in brandy national standars GB11856-2008.In 1997 and 2008,there was two major amendments for the national standard,Zhang Baochun put forward many forward-looking core points.She also introduced OIV's frontier views on brandy to China.
Zhang Baochun is a perfectionist.She is good at finding problems and solve them.Also she is very innovative.Ugni Blanc is the best grape variety for high quality brandy.Because of different growing conditions,Yantai ugni blanc and cognac ugni blanc have some differences.Zhang Baochun overcame those problems and got national invention patent.When present those brandy samples to French cognac experts,they were shocked.They said,"It's very like Cognac but not the same,very good!It's like doing magic."
Over the years,Zhang Baochun led her team has overcome many difficulties and achieved many international levels.She is the only "China wine master" for brandy.She said she had many memorable moments.To summarize is inheritance and innovation.
Zhang Baochun has solid professional knowledge and rich practical experience.She has published nearly 30 professional papers.Her research on whole brandy process system has drive China's brandy technology to a new height and greatly improved the control ability on product quality.
She has developed over 20 new products.Among which,the gold medal brandy and star level brandy account for more than 90% of China's brandy market.Those high-ends brandy have won many medals on London,Brussels and San Francisco wine competitions.
She is very grateful to the support of her families.Her husband said to her "do what you like".Though brandy is a minority category,because she like it,she choose to work in Changyu's brandy company.
In China,Changyu is the pioneer of brandy production.Since its foundation in 1892,it has started brandy production and research.Changyu's brandy accounts for more than 93% of market share.Gold brandy now is very popular on the market.Keya is a high-end brand,which was launched in 2006.
In western countries,brandy was called"water of life".Brandy is an international product,its consumers all over the world.Now many countries are making brandy,but the most famous is from Cognac.Zhang Baochun said,"Cognac is France's,brandy is the world's."
In 2005,she visited France,Italy and Germany with company's Europe delegation.She came to the Cognac and was greatly encouraged by local winemaker's passion.She said,they were the real spokesmen for top brandy!
Zhang Baochun said,her aim is to make the classic and world-class "oriential cognac"! We wish her success and more brilliant products!
