Huailai Amethyst Manor started harvesting their Cabernet Sauvignon grapes on October 11th.
Cabernet Sauvignon grapes is one of late ripe grape varieties in Amethyst Manor¡¯s vineyards.Sugar has reached to 228g/L and acidity 5.64g/L.The quality of grapes are outstanding in this year with good ripeness.
Grapes were carried to the winery in baskets,then went through vibrating mechanical sorting,hand-sorting and berry sorting.From harvesting to fermentation all the work should be done in four hours.
